🔥 Ingredients

For the Marinade & Steak

  • 1 lb (450 g) skirt steak (trimmed)

  • 2 Tbsp olive oil

  • 2 garlic cloves, minced

  • 1 tsp chili powder or cumin (optional)

  • Salt & pepper, to taste

  • Juice of 1 lime

(From Grilling Explained: olive oil, garlic, spices, lime juice for marinade) 

For the Fresh Tomato Salsa

  • 1 cup cherry or diced tomatoes

  • 1 small jalapeño (seeded), minced

  • 2 Tbsp chopped cilantro

  • 2 Tbsp fresh lime juice

  • Salt & pepper, to taste

👩‍🍳 Instructions

  1. Marinate the steak:
    Combine olive oil, garlic, spices, lime juice, salt & pepper. Coat steak, marinate 15–30 minutes at room temperature (or up to 2 hours in the fridge). 

  2. Prep the salsa:
    Toss tomatoes, jalapeño, cilantro, lime juice, salt, and pepper in a bowl. Set aside.

  3. Grill the steak:
    Preheat grill to medium-high. Grill steak 4–5 minutes per side (for medium‑rare). Remove, rest 5–10 minutes, then thinly slice against the grain.

  4. Serve:
    Plate the steak slices, spoon the fresh tomato salsa on top or serve on the side. Excellent with grilled onions, warm tortillas, or quinoa.

  • Grilled or fire‑roasted salsa: Char tomatoes, onions, garlic, and jalapeño, then blend with cilantro, lime, and salt—adds a smoky depth 

  • Fruit & green tomato salsa: Try green tomatoes, cherries, plums, mixed herbs for a sweet-tart twist 

  • Avocado‑tomato salsa: Add diced avocado and grilled onions for richness
