🥗 Roasted Veggie Grain Bowl with Balsamic Dressing

Ingredients

For the Bowl:
  • 1 cup cooked quinoa (or brown rice, farro, or couscous)

  • 1 small zucchini, sliced

  • 1 small red bell pepper, sliced

  • 1 small red onion, sliced

  • 1 small sweet potato, cubed

  • 1 tbsp olive oil

  • Salt & pepper, to taste

  • Optional: ½ tsp smoked paprika or garlic powder

Optional Add-ins:
  • ½ avocado, sliced

  • Handful of baby spinach or kale

  • A few cherry tomatoes

  • Crumbled feta or goat cheese

  • Roasted chickpeas or cooked lentils for protein


🧄 Balsamic Dressing:

  • 3 tbsp balsamic vinegar

  • 1 tsp Dijon mustard

  • 1 tsp maple syrup or honey

  • ¼ cup olive oil

  • Salt & pepper, to taste

  • 1 small garlic clove, minced (optional)


🔥 Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Prepare the veggies: Toss zucchini, red pepper, onion, and sweet potato with olive oil, salt, pepper, and any spices. Spread on a baking sheet.

  3. Roast for 25–30 minutes, flipping halfway through, until tender and lightly browned.

  4. Cook grains if not already done, and keep warm.

  5. Make the dressing: In a small bowl or jar, whisk all dressing ingredients until smooth and emulsified.

  6. Assemble the bowl: Start with grains, add the roasted veggies, optional greens, avocado, cheese, or beans.

  7. Drizzle with balsamic dressing and serve warm or cold.
