 Here’s a delicious zucchini lasagna recipe that’s rich, cheesy, and never soggy! The trick is preparing the zucchini properly so it holds up like pasta sheets.

Ingredients

  • 3–4 medium zucchinis (sliced lengthwise into thin strips)

  • 1 lb (450 g) ground beef or turkey

  • 2 cups ricotta cheese (or cottage cheese for lighter option)

  • 1 egg

  • 2 cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • 3 cups marinara sauce (homemade or store-bought)

  • 1 small onion, finely chopped

  • 3 garlic cloves, minced

  • 1 tbsp olive oil

  • 1 tsp Italian seasoning

  • Salt & black pepper, to taste

  • Fresh basil, for garnish


Instructions

Step 1: Prep the Zucchini (Key to Avoiding Soggy Lasagna!)

  1. Slice zucchini lengthwise into ⅛-inch thick strips (use a mandoline for even slices).

  2. Lay slices on paper towels or a baking rack, sprinkle lightly with salt, and let them sit for 15–20 minutes to draw out moisture.

  3. Pat dry thoroughly with paper towels.

  4. (Optional but great) Grill or roast zucchini slices for 2–3 minutes per side to remove extra water and add flavor.

Step 2: Make the Meat Sauce

  1. Heat olive oil in a skillet. Add onion and garlic, sauté until soft.

  2. Add ground beef, cook until browned. Drain excess fat.

  3. Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer for 10 minutes.

Step 3: Cheese Mixture

  • In a bowl, mix ricotta, egg, half the Parmesan, and a pinch of salt & pepper.

Step 4: Assemble the Lasagna

  1. Preheat oven to 375°F (190°C).

  2. Spread a thin layer of meat sauce on the bottom of a baking dish.

  3. Layer zucchini slices (like noodles).

  4. Spread ricotta mixture over zucchini.

  5. Add mozzarella + a little more sauce.

  6. Repeat layers until ingredients are used up, finishing with sauce + mozzarella + Parmesan.

Step 5: Bake

  • Cover with foil and bake for 30 minutes.

  • Remove foil and bake another 15–20 minutes until golden and bubbly.

  • Let rest for 10–15 minutes before slicing (helps it set).


Tips for Success

Salt & drain zucchini – this step prevents sogginess.
Pre-grill or roast slices for extra firmness and smoky flavor.
Let it rest after baking so the layers hold together.
Use a thick marinara – watery sauce will make lasagna soupy
